My favourite stir-fry

My favourite stir-fry recipe from KuKu is the black pepper beef with asparagus. This is a slight variation from the ‘all-in-one’ stir-fry method.

2 tablespoon cornflour
2 tablespoon oyster sauce
½ teaspoon freshly ground black pepper
2 tablespoon oil
1kg beef, skirt steak, sliced thinly
20 stems asparagus, sliced slanted into 3-4cm and discard the bottom 3cm
3 cloves garlic, peeled and chopped finely
¼ cup hot water

  1. Prepare marinade mix with cornflour, oyster sauce, pepper and 1 tablespoon oil. Marinade beef in the mix for 30 min.
  2. Stir-fry asparagus for 2 min with 1 tablespoon oil and remove from pan.
  3. Sautee garlic in the same pan. Add beef and stir-fry for 1 min. Add hot water.
  4. Add asparagus and stir-fry for 30 sec.

Serves 4 (with steamed rice or noodles)

Note: To preserve its crunchy texture do not cook asparagus for too long.
